Bravas Grilled Cheese

Continuing my lifelong search to adding all the things to grilled cheese! I made some patatas bravas and had leftover sauce...so figured I'd give my toastie a bit of a Spanish flare. This would also be equally as yummy without the ham if you wanted to make it Veggie.

Ingredients
    For the bravas sauce
  • 2 tablespoons Olive oil
  • 1 Small onion
  • 2 Garlic Cloves
  • 1 Can chopped tomatoes
  • 1 tablespoon Tomato puree
  • 2 teaspoons Smoked paprika
  • 1 pinch Chilli powder
  • 1 pinch Sugar
  • 2 tablespoons Chopped parsley
  • For the grilled cheese
  • 8 Slices thick cut bread
  • 8 Slices Serrano ham
  • 100 grams Mature cheddar cheese, grated
  • 4 tablespoons Butter
Instructions
    For the bravas sauce
  1. Heat the oil in a pan and fry the onion for about 5 mins until softened. Add the garlic, chopped tomatoes, tomato purée, sweet paprika, chilli powder, sugar and a pinch of salt, then bring to the boil, stirring occasionally. Lower to a simmer and cook for 10 mins until pulpy. Transfer to a blender and blend until smooth.

  2. For the grilled cheese
  3. On all 8 slices of bread, spread a layer of the bravas sauce. On 4 of the slices, divide up the Serrano ham and cover with the grated cheese. Put the remaining slices of bread on top to make a sandwiches. 

  4. Option 1 - in a frying pan

    Heat a large frying pan over a medium heat.

    Butter the top of outside of the sandwiches, flip upside down and place 2 sandwiches at a time in the pan. Butter the top of the sandwiches on the other side.

    Cook for 2 minutes - make sure to keep an eye on the bottom of the sandwiches so they don't burn. Flip onto the other side and cook for another few minutes until the cheese is completely melted - remember to keep checking. And serve! 

  5. Option 2 - on a panini press or toastie maker

    Turn on your panini press and let it heat up for a few minutes. 

    Butter the top of outside of the sandwiches, flip upside down and butter the top of the other side.

    Place on the panini press and cook for 4-5 minutes - or until the bread is golden brown.
