Fried gnocchi with whipped feta & goats cheese

I'm on a bit of a whipped feta kick at the moment! It's so quick to make in a food processor and it makes everything you put it on taste amazing. I also firmly believe that frying gnocchi is the absolute best way to eat it - no stodgy boiled gnocchi in this house!

Description

Super quick and delicious dinner! Make extra whipped feta and goats cheese and spread on toast for lunch too...

Ingredients
  • 300 grams Tenderstem broccoli/broccolini
  • 200 grams Cherry tomatoes
  • 2 cloves Garlic
  • 4 tablespoons Extra virgin olive oil
  • 100 grams Feta cheese
  • 100 grams Soft goats cheese
  • 3 tablespoons Chives
  • 3 tablespoons Chopped basil
  • 1 teaspoon Sea salt
  • 1/2 teaspoon Black pepper
  • 500 grams Shop-bought gnocchi (Feel free to make your own if you prefer and have time!)
  • Parmesan cheese
Instructions
  1. Pre-heat the oven at 180 degrees. Pop the broccoli and cherry tomatoes in a roasting tin or dish. Finely chop or grate the garlic and sprinkle over the vegetables, along with 2 tablespoons of the olive oil. Roast them in the oven for 15 minutes.

  2. While the vegetables are roasting, in a food processor, combine the feta, goats cheese, chives, basil, salt & pepper. Depending on the consistency, drizzle in a bit of oil olive at a time until it's smooth. 

  3. In a non-stick pan over a medium heat, add a tablespoon olive oil and the gnocchi. Fry until the gnocchi gets a bit brown and toasty. 

  4. Serve with the feta & goats cheese sauce on the bottom of the plate and add the gnocchi and roasted vegetables on top. Serve with a sprinkling of parmesan. YUM.
