Grilled pineapple pico de gallo salsa

Yummy salsa for tortillas chips or to go with any Mexican food you’re making!

This is one of my favourite Summer snacks – just a fun way to change up a regular Mexican salsa. Great with tortilla chips or to go with any Mexican food – maybe a Tequila chicken…ooo yum…

  1. Cut the pineapple into rounds, removing the tough core.

  2. Heat a griddle or nonstick pan on medium-high heat and pop in the pineapple (with no oil). Grill on each side until it starts to get a little bit brown.

  3. Chop the pineapple, tomatoes & avocados into small similar-sized chunks. Chop of the coriander finely and cut the lime into quarters. ⁣

  4. Throw all the veg into a bowl. Squeeze over the lime juice and add the chopped coriander. Add salt and pepper to taste. Serve with tortilla chips, quesadillas, grilled chicken - whatever you like!
