Pesto & 3 Cheese Grilled Cheese

My yummy pesto-y twist on a grilled cheese sandwich.

I’m not gonna lie, this is not a healthy recipe. There’s 3 different cheeses, butter and bread involved here. But it’s ok – I went to the gym just before I ate it, so it balances out. Right? RIGHT?!

Today I spiced up the humble grilled cheese toastie by adding my nut-free pesto! Cheese and pesto are obviously friends anyway, but they’re soooo yummy in this sandwich. For the cheeses I used sliced mature cheddar, sliced smoke gouda and a little of fontina cheese – but you can really use whatever favourite cheese you like. I particularly like fontina coz it’s what makes it go all stringy and delicious…mmm….

Pesto & 3 Cheese Grilled Cheese

  1. First, spread the butter on the two slices of bread and turn them over. If you need to defrost the pesto, do so in the microwave for 30 seconds. Then spread the pesto on one of the un-buttered sides of the bread. 

  2. Arrange the various slices of cheese over the pesto. Put the other slice of bread on top with the buttered side on the outside.

  3. Put a frying pan on a medium-high heat and let it heat up.

    Once hot, gently lay the sandwich in the pan. Cook for 3 minutes on the first side with a lid over the top of the sandwich. The lid helps melt the cheese. Turn over carefully and fry for another 3 minutes on the other side. Be careful the heat is not too high or the bread will burn.

  4. Serve when the sandwich is golden on the outside and the cheese has completely melted.
